This is my go-to for our monthly girls brunch and everyone loves it!

My girlfriends and I try to get together at least once a month for brunch and these hashbrowns are always requested. They make having to get up an extra hour early worth it!
So yummy & super easy; I can make it in my sleep, which is helpful since I'm usually half asleep when I make it anyways.
Cheesy Crockpot Hashbrowns
Ingredients:
1 bag (30oz) frozen, shredded hashbrowns
1 can cream of chicken soup
1 24oz container of sour cream (yes, the big one)
1 tsp garlic powder
1 tsp onion powder (you could sauté an onion in some butter or oil and add as well, but I have friends that do not like onions, so I just use the powder)
1 & 1/2 cups shredded cheddar cheese
1 8oz bag of Private Selection® Alpine Blend Swiss & Gruyere Thick Cut Shredded Cheese (you can substitute another brand, but this is the one I use that gets the most raving reviews)
4 tbsp of butter
salt
pepper
Directions
When I am making this for brunch, I put the frozen hashbrowns in the refrigerator the night before to help them thaw just a little before cooking.
Insert crockpot liner in crockpot (these are lifesavers when it comes to clean up time and we could all use easy clean up after we've had a mimosa or 2) I use these: https://a.co/d/e1JNNrLhttps://a.co/d/e1JNNrL If you don't have a liner, spray crockpot with cooking spray.
Mix sour cream, cream of chicken soup, onion powder & garlic powder together until well combined.
Mix in Swiss & Gruyere cheeses
Add salt and pepper to taste
Finally add in semi-thawed hashbrowns and mix until well coated
Pour mixture into crockpot and spread out evenly
Top with pats of butter
Cover and cook on low for 5-7hrs or high for 3-4 hours
With about an hour left of cooking time, add cheddar cheese on top
Transport to brunch location and enjoy
